There is definitely quite a few things speaking for string girths. They evenly distribute the pressure, they follow the horse's shape very well, they don't trap moisture from sweat underneath (which can cause irritation on the horse's skin) and you are less likely to do them up too tight. Especially the last point is something many people accidentally do with elastic girths.
Actually Ingrid Klimke, a very highly decorated German eventer, uses string girths whenever possible. You can even see her ride in a dressage Grand Prix with one. Though she uses a leather girth for jumping and eventing to protect the horse from hitting itself with the studs required on her level.
 
This doesn't mean that using a different girth is something bad. They come with other benefits. In the end it depends on what your horse is fine with.
